Apricot Coconut Balls


Makes 10 – 20 balls


  • 3 cups organic dried apricots
  • 2 tbsp freshly grated organic orange zest
  • 3/4 cup shredded coconut (1/4 for mixture, and 1/2 for rolling)
  • 1 tsp lemon juice
  • 1 tbsp orange juice

For sweetener, you have a couple options:

  • 1/2 cup organic dates, pitted and soaked for an hour, or…
  • 2 tbsp organic raw honey


Step 1:

Put everything into a food processor or high powered blender, leaving 1/4 cup of the shredded coconut for rolling.

Pulse/blend until everything is mixed together. If you are having difficulty mixing, you may want to try dividing it up and blending the mixture in 2 batches. Or, you can add the apricots first to chop those up a little, then add the rest of the ingredients after.

If the mix is too try, add more dates. If too wet, add more shredded coconut.

Step 2:

Once the mixture is a thick, dough-like consistency, spoon out a small amount and roll into 1 to 1 1/2 balls. Roll the balls in the shredded coconut, then please in the fridge or freezer.

If you want to eat immediately or over the course of the week, the fridge is fine. If you want to make a snack to keep for several weeks, store in the freezer and take some out when you are ready to eat. These never fully freeze because of the texture, so it’s a perfect grab and go snack!
