Coconut Almond Milk


  • 1 large fresh coconut
  • 1 cup soaked almonds (soak them overnight, or for about 8 hours)
  • 2 cups water


  • Poke holes into the coconut and drain out the water. This should be about 1.5 to 2 cups. You will use this coconut water for the milk.
  • Next, crack open the coconut and scoop out the meat. You will only use about 1 cup of the coconut meat, as too much will make the milk too thick.
  • Once the meat is scooped out, add it to the blender, along with the coconut water, almonds and regular water. Blend on high for about a minute, then on low so you can be sure everything is fully mixed.
  • You have the choice now to filter out the coconut and nut pulp, or leave it in. Normally I leave it in and just drink it, but today I thought of a delicious recipe using the coconut/almond pulp, so I decided to filter the milk and save the pulp for a future recipe.
  • Once filter out the pulp, you are left with this glorious, creamy, delicious tasting milk. You can drink on its own or save for your coffee creamer or smoothies.
